Cooking Tips: Making stock

Make your own stock anytime you cook or smoke a chicken or turkey. Just put the properly stored leftover poultry and carcass into a stock pot filled about 2/3 full with water. Add some garlic and peppercorns and any veggies that you have in the kitchen. Bring to boil and simmer for a couple hours. Cool and refrigerate overnight, and then warm on the stove and remove the fat from the top.

Then just strain it in the morning, return the stock to the pot. Add a few cups of water, stir and you're done.
