My family tears this up and EVERYBODY has seconds! Ingredients: 2-3 lbs chicken pieces (I use legs with the thighs attached and breasts with the bone in - you can use what you have on hand)
2 Tbsp oil
Seasoned salt and pepper to taste
Dried thyme
2 packets of sazon* (goya,in the spanish aisle), if desired
adobo* (goya,in the spanish aisle), if desired
Oregano
Garlic powder
1 med onion, sliced

In large pan heat the oil. Add the chicken and brown on both sides. Drain on paper towels and place in crockpot. Drain oil from pan, leaving the browned pieces in the pan and a tiny bit of oil. Add the onion and brown. Add chicken broth and bring to boil. Pour broth and onions into the crockpot over the chicken. Cook on LOW 7-9 hours, HIGH 4-5.
