| Ingredients: 12 eggs
4 tablespoons butter
1/2 tsp. salt
Pepper to season
6 tablespoons half and half
1 cup finely grated mild Cheddar cheese

salt, pepper and cream, whisk briskly to mix.
Heat butter in large skillet over low heat. Add
the egg mixture and cook slowly. As the eggs
just start to set lift and stir. Continue to do this,
adding the cheese as they begin to firm up.
Remove from pan when they are no longer wet,
but not browned. Transfer to platter and garnish
with fresh snipped chives. This should
