| A fast and different way to make
Enchiladas, using salsa instead of
enchilada sauce. Ingredients: 1 big jar of salsa
1-1/2 cups cottage cheese
some chopped green onion
1 can chopped olives

enchilada sauce over the bottom.
In bowl, mix cottage cheese, 1 cup
cheddar cheese, green onion,and
olives.
Take about 1/4 cup of mixture and
place inside each tortilla. Roll up and place in dish on top
of salsa.
Pour the rest of salsa over the top
of the filled enchiladas. Add remaining cheese on top of
enchiladas.
Bake covered at 375 for 20-25 minutes. Serve with a green salad These are very easy and everyone
loves them. They can be made the
night before. Prep time: 10 minutes 8 servings Low fat cottage cheese and cheddar
