Tortilla Apple Turnover



Apples, pecans, oats, cinnamon and a touch of soy or real cream cheese all wrapped up in a flour tortilla. Good for a snack or for dessert, too. Vegan or vegetarian.

Ingredients:
1 apple (Granny Smith or Gala)
2 flour tortillas
1/2 cup chopped pecans
2 Tbls oats
"Better Than Cream Cheese" made by Tofutti (or real cream cheese)
cinnamon
margarine or butter

Directions:
Toast pecans and oats in a frying pan dry. Meanwhile, core apple and slice into small pieces. Add margarine (about a tablespoon) to pan and then add apples. Cook covered for about 2 minutes or until apples become tender. Add cinnamon and stir mixture until coated.

Remove apple mixture from pan and add another tablespoon of margarine. Fry tortillas until golden.

Remove tortillas, let cool slightly and spread a thin layer of "cream cheese" on them. Add apple mixture and fold tortilla over. Serve warm. Notes: May add maple syrup or other sweetener to make it into a dessert. Also may add raisins.
