1 can of diced tomatoes
1 can of carrots
1 can of green beans
1 medium potato
1 cup of rice
2 cups of water
1 tablespoon of oil

Add chicken and brown. Next add tomatoes with the liquid from the can. Add drained carrots and green beans. Next add diced potato and rice. Add 2 cups of water and salt and pepper to taste. Let simmer untill the rice and potatoes are done. Aproximately 30 minutes. Add 2 cups of cheese to top and wait 5 minutes and serve. Great for busy families.
