2 pounds fish fillets
1/2 cup yellow cornmeal
1/2 cup flour
1 tablespoon salt
Optional: 1/2 tsp. lemon pepper
How to make this recipe:
Mix together the dry ingredients. Rinse the fish with running water. Dip each piece into cold water then roll in cornmeal mixture until it is covered on all sides.
Cook fish in hot vegetable oil at a temperature of 385-400 degrees. Fry until golden brown, about 4-8 minutes. Serve with lemon wedges.
