| Ingredients: 1 box cornbread mix
1 small can cream corn
1 tablespoon water
1 tsp. chili powder
1 pound ground chuck
1 tablespoon chili powder
1 cup salsa, or mild hot sauce (like the Taco Bell brand)
1/2 tsp. garlic powder
1 can pinto beans (drained)
1 cup shredded Cheddar, or Monterey Jack cheese Print me! Add the drained beans, 1 tablespoon chili powder, garlic powder, hot sauce or salsa and drained beans. Stir, and, if necessary, add water to make it "saucy" but not watery.
In a medium bowl mix the cornbread according to package directions with 1 tsp. chili powder, 1 tablespoon water and the creamed corn. Mix well.
Spray a pie plate or shallow casserole dish with cooking spray. Spread the cornmeal mixture in the bottom. Pour the ground beef mixture over the cornmeal mixture. Top with the cheese.
Bake at 400 for about 20 minutes. Watch to make sure cheese doesn't become too brown. Variations: This can be changed to your family's tastes so easily. You may add olives, diced onions, corn, black beans, or even a can of refried beans to the ground beef.
