| Chicken with curry sauce over rice Ingredients: up to 8 chicken breasts
1/4 cup butter
1/2 cup chopped onion
1/4 cup unsifted all purpose flour
4 tsp. curry powder
2 tsp. sugar
1 tsp. salt
1/4 tsp. ginger
1/8 tsp. pepper
2 cups milk

Add onion; saute until golden brown (about 5 min.) and remove from heat. Add flour, curry powder, sugar, salt, ginger, and pepper. Stir until smooth. Add milk, small amount at a time.
Over medium heat, bring to a boil. Stir constantly until sauce thickens. Stir in lemon juice. Pour the mixture over the chicken and bake, covered, at 350 for 1 hour or until chicken is done. Serve with rice.
