| This is a recipe that I make when I am in a hurry. I also make it when I have a few friends over -- boy do they love it! Ingredients: 8 oz. Penne Pasta
1 med. onion
1 clove garlic, minced
2 tbs. butter or margarine
1/2 cup {armesan Cheese
1 cup milk
1 cup low-fat/regular cheddar cheese
1 can stewed tomatoes
1 tbs. chopped parsley
1 tsp. each salt, pepper
1 or 2 cans tuna-in water, drained and flaked Print me! Just click here to get a printer-friendly version of this recipe. • Share it: click to send this recipe to a friend! | | Directions: Prehear oven to 350 degrees. In large saucepan of boiling salted water, cook pasta as package directed.
Meanwhile, in a large skillet, over medium heat, saute onion and garlic in butter until softened, about 3-4 minutes. Add flour, cook 1 minute.
Gradually add milk, bring to a boil, stirring until thickened. Add cheddar cheese, stir until melted. Stir in tomatoes (for those of you who do not like to taste or see the chunk of tomatoes, you can run the tomatoes in small food processor or chopper for a few seconds before adding it). Add parsley, salt and pepper. Bring to a boil: remove from heat. Add tuna and pasta to sauce. Mix well.
Pour into a 2 quart baking dish coated with vegetable cooking spray. Sprinkle with parmesan cheese. Bake 30 minutes or until golden brown.
Serve with a green salad with Italian dressing.
