| This is a fun activity for kids -- with a pretty and sweet end result. Ingredients: 1 cup water
2 cups white granulated sugar
1 jar
1-3 lengths of string or cord
1-3 paper clips
1 pencil

Get a clean glass jar (thinner jars work well) and some sturdy cotton string or cord. Tie the cord around a pencil so the tail of the cord can dangle into the jar. The cord should be long enough to reach almost to the bottom of the jar. (Some people like to weight down the end of the cord with a paperclip.)
Depending on the size of the jar, you can dangle 1-3 strings at once -- just be sure they are at least 1 inch apart. Roll the string in sugar granules to help encourage crystalization.
To create the sugar solution: Boil water in a saucepan. Remove from heat and stir in the first 1-1/2 cups of sugar until completely dissolved. Then start adding the remaining 1/2 cup of sugar a tablespoon at a time, always making sure to stir until dissolved. If desired, add a couple drops of food coloring.
Pour the sugar solution into the jar, and then insert the strings. Place the jar in a still, safe place where it will not be disturbed. Edible sugar crystals will begin to grow in a day or two. When they have grown as big as you like, remove the crystals from the water. Prep time: 15 minutes. You will need patience to wait for the crystals!
