Aunt Dorothy's Latkes



Classic potato pancakes that make everyone's mouth water! This recipe is one I grew up eating at Chanukah parties and Passover Seder's (always made by Aunt Dorothy, of course).

Ingredients:
5 lbs potatoes
4 eggs
3-4 medium onions
2 TBL matzo meal or flour
1 lemon
vegetable oil for frying
salt/pepper to taste

Directions:
Wash and peel potatoes. Set in a water filled bowl, squeeze in juice from one lemon, let lemon float in with potatoes.

Using a food processor or hand grater, coarsly grate potatoes. Squeeze out any excess water.

Grate onion, add to potato.

Add eggs, matzo meal, salt and pepper.

Using hands, mix ingredients together. Be sure to mix well.

Heat oil in frying pan over medium heat. Using hands or table spoon, scoop up mixture (about the size of a golf ball). Drop into oil, flatten with spoon. Fry until golden on each side (flipping as necessary).

Allow to drain and cool on paper towel. Serve with apple sauce, sour cream or sugar and cinnamon!


About 2 hours

Serves about 10
