Manicotti Ole'



A wonderful mix of Italian and Mexican flavors, brought together in a simple meal.

Ingredients:
1/2 lb ground beef
1 cup refried beans
1 tsp. dried oregano
1/2 tsp. ground cumin
about 8 manicotti shells
1/2 cup grated cheese
1/4 black olives sliced
1/4 green onions sliced
1/2 cup sour cream

Directions:
In skillet, cook beef til no longer pink. Add beans, cumin, and oregano. Stuff uncooked manicotti. Place in 8 x 8 casserole dish. Add water and salsa/taco sauce. Cover with plastic wrap, vent. Cook in microwave on high 10 minutes. Remove, rearrange manicottis.

Re-cover and cook 20-25 minutes at 50% power. turning manicotti at least once. Remove plastic, top with sour cream, cheese, olives, and onions. Cook 2 minutes or until cheese melts. Suggestion: Serve with a fresh salad. Spanish rice would be nice as well.


Note: Can substitute ground turkey.
