Chicken Broccoli



Absolutely one of the best! The first night I cooked this (yes, it was from the freezer but thawed), my son and husband ate all but one little bit of broccoli. Definetly one to add to your collection.

Ingredients:
1 10 ounce pkg frozen chopped broccoli
4 cups cooked, chopped chicken
1 10 3/4 oz can cream of chicken soup
1/2 cup light (or regular) mayo
1 4 oz can mushroom stems and pieces, drained (optional)
1/4 teaspoon curry powder
3/4 cup grated Parmesan cheese (fresh is best)

Directions:
Cook broccoli per directions. Drain and spread in a 13x9x2-inch baking dish that has been treated with nonstick spray. Mix chicken, soup, mayo, mushrooms, curry, and 1/2 cup Parmesan cheese in a medium bowl.

Spread chicken mixture over broccoli. Sprinkle 1/4 cup Parmesan cheese over top. Cover dish with foil (heavy duty) and freeze.

To prepare for serving, thaw dish and preheat oven to 350 degrees. Cover and bake for 40 minutes. Remove foil, stir to bring colder food in center to outside; bake for 20 additional minutes. Serve with croissants and salad


Note: If not freezing, follow cooking instructions.

Prep time: 30 minutes

Serves 6 (but not at my house)
