Paprika Chicken and Rice



Savory chicken served with rice.

Ingredients:
1 1/2 Tablespoons Paprika
2 Teaspoons Salt
1 1/2 Teaspoons Black Pepper
3/4 Teaspoon Garlic Powder
1 Teaspoon Oregano
4 Chicken Breasts
2 Tablespoons Olive Oil
1 Small Onion - diced
1 cup Green or Red Bell Pepper - diced
2 Cups Rice
3 1/2 Cups Water

Directions:
Combine the first 5 ingredients together and coat the chicken with the mixture.

In a large skillet with a tight-fitting lid, heat the oil to medium hot. Brown chicken on both sides.

Add the vegetables and rice to the pan with the chicken, stiring to coat with the oil. Add the water and bring it to a boil. Reduce heat to a simmer, cover and cook for 20-25 minutes until the rice is fully cooked.


Prep time: 30 minutes

Serves 4
