Twice-Baked Potatoes Deluxe



Tasty and tempting potatoes to spice up any meal or to serve as a meal! Yummy!

Ingredients:
6 baking potatoes
Salt and pepper to taste
margarine or butter
milk
1/4 cup chopped onion
3/4 cup grated cheddar cheese
3/4 cup grated Monterey Jack cheese
1 16-ounce box frozen, chopped spinach, thawed and pressed dry

Directions:
Preheat oven to 400 degrees if you do not plan to freeze this dish.

Prepare 6 baking potatoes and bake for 1 hour. Maintain oven temperature. While potatoes are still hot, slice each in half lengthwise. Carefully scoop pulp into a large mixing bowl, leaving a thin shell. Mash potatoes, adding salt, pepper, and margarine to taste and milk as needed. Stir in onion and cheeses and spinach. Spoon mixture back into shells.

Bake for 20 minutes or until lightly browned. Serve immediately. Or freeze potatoes before reheating them. To serve, remove as many as needed. Allow to thaw; place on a rimmed cookie sheet or in a baking dish.

Bake in a preheated 400 degree oven about 20 minutes or until lightly browned.
