Pigs in a blanket / Stuffed cabbage



Tasty meatballs wrapped in cabbage with a sauerkraut and tomato sauce, topped with bacon.

Ingredients:
1 head cabbage, cored
boiling water to cover
1-1/2 lbs. ground beef
1 c. cooked rice
1 packet onion soup mix
1 jar sauerkraut, drained
2 8 oz. cans tomato sauce
1 pkg. bacon

Directions:
Boil cabbage until leaves are easily removed.

In a large bowl, combine beef, rice, onion soup mix, and 1/4 cup of the tomato sauce. Form mixture into 1-1/2" balls, and wrap with cabbage leaves. Layer remaining cabbage leaves in casserole dish with the cabbage-wrapped meatballs. Top with sauerkraut and remaining tomato sauce. Layer slices of bacon across the top.

Bake in 350 F oven for about 1-1/2 hours.


To expedite the prep time, start the water immediately and use instant rice. The cooking time is approximate... I've cooked this for 2+ hours, reducing the cooking temperature after the first hour.

Prep time: 30 min.
