Chicken Cacciatore



Ingredients:
1 3-pound whole chicken, cut into serving-size pieces
1/2 cup all purpose flour
salt
black pepper
cayenne pepper
1/4 cup olive oil
1 medium onion, sliced thinly
1 clove garlic, minced
1 large bell pepper, sliced thinly
1 pound Italian Plum Tomatoes canned, coarsely chopped
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon rosemary
4 ounces mushrooms, sliced

Directions:
Combine flour, salt, pepper and cayenne. Coat chicken pieces with mixture and set aside.

In a heavy pan, saute onions, garlic and bell pepper in oil until limp. Remove form pan and set aside. In the same pan, brown chicken pieces. Add cooked ingredients to pan along with all remaining ingredients.

Simmer over medium low heat until chicken is cooked through, approximately 30-40 minutes. Serve over noodles or spaghetti with a green salad.


Note: Any kind of chicken, cut into pieces, can work with this recipe. The fat content can be lowered by reducing the amount of oil and supplementing with olive oil flavored cooking spray.

Serves 4
