1 C flour
1/2 tsp. nutmeg
1-1/4 C ricotta cheese
4 tsp. sugar
1 1/4 tsp. baking powder
2 eggs
3/4 C milk
juice of 1 lemon
grated zest of 1 lemon
How to make this recipe:
Combine dry ingredients. Combine remaining ingredients, then mix with the dry ingredients Use about 1/4 cup batter for each pancake and cook on a hot, oiled griddle or in a skillet. Flip when bubbles start to form on the top and cook on second side until golden brown. Dust with confectioner’s sugar if desired. Makes 14-16 pancakes
