Allow to boil for one full minute after it reaches a rolling boil. Add the peanut butter and vanilla. Stir in oatmeal.
Drop by teaspoonfull onto a wax-paper-covered cookie sheet. Place in refrigerator to cool. These are hard to eat only one at a time, so be warned! After becoming firm in the refrigerator, I remove and place in a sealed container. There is no need to keep them refrigerated.It's got nutritious oatmeal and peanut butter to offset the calories of the cocoa -- haha!
