2 T olive oil
1 med. onion, finely chopped
8 large garlic cloves, minced
2 T flour
1/2 C chicken stock
1/2 C whipping cream
10 oz. package fresh baby spinach leaves
1 C grated Parmesan cheese
1/3 C sour cream
1/2 tsp. cayenne pepper

Add onion and garlic; sauté until onion is tender, about 6 minutes. Stir in flour and cook for another 2 minutes. Gradually whisk in stock and cream and bring to boil, whisking constantly.
Cook until mixture thickens, stirring constantly, about 2 minutes. Remove from heat. Stir in spinach, cheese, sour cream and cayenne. Season with salt and pepper.
