| Served with pasta or rice, this lowfat chicken dish is a full meal. Ingredients: 4 boneless, skinless chicken breasts, cut into bite-size pieces
1 lg. onion, cut in thin wedges
1 lg. bell pepper, thin strips
1/4 cup olive oil (or canola oil)
2 cans DelMonte Italian tomatoes
1 8 oz. pkg. Angel hair pasta
Grated parmesean cheese

Add chicken, peppers, onions and salt and cook, stirring constantly, until vegetables are tender. Do Not drain. Add 2 cans of the tomatoes. Cover and simmer for 30 minutes over medium heat.
Cook pasta according to package directions. Drain.
Serve chicken mixture over pasta and top with grated parmesean cheese.
Serve with salad or baked apples and crusty rolls for a complete meal.
