1/2 cup bread crumbs
3 egg whites
4 tablespoons stone ground mustard
2 cups heavy cream

Beat eggwhites until slightly foamy and mix in 2 tablespoons of the stone ground mustard. Dip chicken into the egg mixture, then coat with pecans. Saute in butter until cooked through. Remove chicken to platter and keep warm in oven.
Add cream to the pan drippings. Stir in remaining 2 tablespoons mustard. Spoon sauce over chicken and serve.
