Chocolate Zucchini Bread



I like to make this bread because I can use it as a bread or as a dessert.

Ingredients:
3 eggs
2 c sugar
1 c vegetable oil
1 tsp vanilla
2 c grated zucchini (not peeled)
2 oz unsweetened chocolate, melted
2 c flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3/4 c semisweet chocolate chips
3/4 c walnuts (chopped)

Directions:
In a large mixing bowl, combine eggs, sugar, oil, and vanilla. Beat with mixer on low speed until blended. Add zucchini and melted cooled chocolate; stir.

Sift together flour, baking soda, salt and cinnamon. Add dry ingredients, chocolate chips and nuts to egg mixture. Stir just enough to blend in the dry ingredients.

Pour the batter into a greased and floured 9 x 5 loaf pan. Bake in a preheated 350 degree oven for 60-70 minutes.

Cool in pan on wire rack for 10 minutes; turn out of pan and cool on rack.


Prep/cooking time: 1-1/2 hrs
