Raisin Drop Cookies



Here is an old-fashioned, delicious cookie recipe. Don't let the raisins in this recipe put you off; they are prepared to be plump, juicy and sweet in this cookie. A former boss used to make these for her employees each year for Christmas and I begged her for the recipe. Thanks Janice!

Ingredients:
1 1/2 cups water
2 cups raisins
1 cup melted shortening
2 cups sugar
3 eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Directions:
1. Combine water and raisins, boil for five minutes and allow to cool slightly.

2. In large mixing bowl, beat eggs, sugar and vanilla together. In another mixing bowl, combine all remaining dry ingredients. Stir to mix.

3. Alternate adding dry ingredients with melted shortening and raisin/water mixture to the large mixing bowl with the eggs/sugar mixture.

4. Once all ingredients are combined, chill dough for several hours or overnight.

5. Drop melon-size spoonfuls onto greased cookie sheets. Bake at 350F for approximately 15 minutes.


Dough keeps in the refrigerator for at least one week. Baked cookies freeze well.

Makes about 6 dozen
