1 small onion, chopped
2-3 cloves fresh crushed garlic
1 chopped jalepeno pepper (optional)
1 tablespoon cumin
1 cup uncooked rice
1.5 cups water
1 12 oz can black beans, rinsed

2. Saute onion and garlic (and pepper, if included) until tender.
3. Add cumin and continue sauteing for a couple minutes.
4. Add rice and cook for two minutes, stirring frequently.
5. Add water and bring to a boil. Cover and simmer until water is absorbed, approximately 15-20 minutes.
6. After rice is finished cooking, add rinsed black beans, a handful of cilantro and salt/pepper to taste. Heat through and enjoy!
Serve as a side dish to a Mexican meal or roll up into warm flour tortillas Fast and easy, easy, easy.
