Mock Pot Roast



Here's an easy one-dish meal with ground beef.

Ingredients:
1 to 1.5 lb. ground beef (I use 85 or 90% lean)
2 pkgs. dry beef onion soup mix
2 c. water (more or less)
.5 to 1 lb. peeled baby carrots (or regular carrots, peeled and cut into 2-3" chunks)
4-5 potatoes, quartered (peeled, if desired)
1-2 stalks celery, if desired
1 T. cornstarch or 3 T. flour

Directions:
Mix ground beef with 1 envelope onion soup mix; shape into patties. Spray skillet with cooking spray. Brown patties on both sides.

Mix remaining packet of soup mix with water. Add carrots, potatoes, and celery, if using, to the skillet. Pour soup over meat and veggies, lifting the meat patties to make sure they don't stick.

Cover and simmer for about 30 minutes. Remove meat and veggies.

To make gravy, mix cornstarch or flour with a little cold water until smooth, add to broth in pan, and whisk until thickened.

Time saver: use a bag of frozen stew veggies instead of those listed above. No cutting or peeling!
