| Here's my short-cut version of my mom's Swiss steak recipe. The kids love it, and you can use low-fat, inexpensive cuts of meat! Ingredients: 1 to 2 lbs. beef cube steak or beef round, tenderized (sirloin works, too)
flour
salt and pepper
1-2 T oil
1 or 2 cans stewed tomatoes with celery, onion, and green pepper

Put flour, salt, and pepper on a plate or in a plastic bag. Cut steak into serving-size pieces and coat with flour. Brown lightly in pan, turning once. Add undrained tomatoes and onion, if using.
Cover and cook about 30 minutes, longer if your meat is thick or isn't tenderized.
You can also make this in a crock pot (don't bother to brown it first) or pressure cooker (after browning, cook about 5-10 minutes at high pressure), or put it in a casserole dish and bake in the oven. I just usually don't have time for that!
