Betsy's Russian Hats



Ingredients:
Peanut Butter Cookie Dough:
3 /4 cup creamy peanut butter
1 /2 cup shortening
1 1 /4 cup firmly packed brown sugar
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 3 /4 cups all-purpose flour
3 /4 teaspoon salt
3 /4 teaspoon baking soda

Garnish:
Hershey's chocolate kisses
small bowl of granulated sugar

Directions:
Heat oven to 375 F. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed until well-blended. Add egg and beat just until blended. In separate bowl, combine flour, salt and baking soda. Add slowly to peanut butter mixture until fully blended. Roll heaping teaspoonfuls of dough into irregular balls and coat with granulated sugar.

Bake on ungreased cookie sheet for 7-8 minutes. Upon removal of cookies from the oven, immediately press one Hershey's chocolate kiss into the center of each cookie. Allow cookies to cool completely before storing.
