Sweet and Sour Chicken in the Oven



A low prep time meal with little monitoring needed and flavorful results!

Ingredients:
1/2 Jar Russian Salad Dressing
1/2 Jar Apricot Marmalade
1 packet of Lipton Onion Soup mix
Rice (the amount depends on number of people you're serving)
Chicken: Legs, thighs, breasts, wings -- use the number and type that you prefer for the number being fed. (I take the skin off -- it is a little healthier.)

Directions:
Mix the dressing, Marmalade and soup mix together. Blend well
Place the chicken in a 9x10" glass pan and pour the mixture over the chicken, coating well. Cover the dish with tin foil and bake at 350 degrees for 1hour - 1 1/2 hour depending on the amount of chicken used.
In the last 20min of cook time, start your white rice.
Place a serving of rice on each plate, place a peice of chicken (or two) on top and spoon some of the sauce out of the pan onto the rice and chicken.


I like to add a loaf of French bread toasted in the oven and some veggies (steamed asparagus is good)

Prep time for chicken: 5 minutes

Serves 3-5

My husband is a Type one Diabetic and loves this dish. Don't be intimidated by the sauces. The way we count it is each piece of chicken has 1 serving size of the marmalade and dressing plus how ever many spoonfuls you put on the rice. The serving size is usually 1 tbls size.
