2 onions, chopped fine
1/3 cup butter or cooking oil
1/4 cup bell peppers, chopped fine
1/4 cup onion tops
1/4 cup parsley, chopped
2 cloves of garlic, chopped
1/4 cup roux or brown your flour
1 cup mushroom soup
1 Tablespoon tomato sauce
1 cup water
1/4 cup Cajun Cowboy Seasoning (www.cajuncowboyseasoning.com, or season to taste)

Add 1/4 cup roux - stir in 1 cup of hot water) until disolved.
Add mushroom soup, tomato sauce, parsley and onion tops.
Season to taste or use 1 Tablespoon of Cajun Cowboy Seasoning. Cook 15 minutes.
Season crawfish with rest of seasoning. Put crawfish tails in sauce and cook 15 to 20 minutes.
Serve over rice with a tossed green salad on the side. Serves 6.
