Cajun Cowboy Seasoning to taste (www.cajuncowboyseasoning.com)
1 cup bell pepper, chopped
2 cups onions, chopped
1/4 cup onion tops, chopped
1/4 cup parsley, chopped
1 cup cooking oil
1 cup flour
1 garlic clove, chopped
1 can tomato paste
1 large can of mushrooms, pieces and stems

Thoroughly brown meat on all sides in hot oil. Add flour and brown while stirring constantly.
Add chopped onions and garlic. Cook a few minutes until onions are clear. Add water to cover top of meat then cover the pot and cook until meat is tender.
Add tomato sauce, onion tops, parsley, mushrooms and a cup of water. Let simmer on low-med. heat, until sauce is thick.
