l large onion
4 quarts water
1 large hen, 3 lbs. cut into serving pieces
2 lbs. Pure Pork Sausage, cut into 2-inch pieces
1 bunch of onion tops, chopped

Season both sides of chicken with
Cajun Cowboy Seasoning (www.cajuncowboyseasoning.com)
Sift flour in oil on medium-high heat to make a roux. Stirring constantly, cook the roux until it is the color of dark coffee.
Add chopped onion and stir for 10 minutes.
Add 4 quarts of water and seasoned chicken. Boil for 1 hour, adding Cajun Cowboy Seasoning to gumbo juice to taste -- about 2 Tablespoons.
Add the sausage and boil 40 minutes. Skim fat off the top and add onions and parsley.
Serve over rice in soup plate.
