Pistachio Date Gateau with Plum Compote



Ingredients:
Pistachio Date Gateau
2 Tablespoons walnut oil
4 ounces butter
12 ounces sugar
5 eggs
2/3 cup flour
8 ounces pistachios
1/4 cup dates
1/4 teaspoon salt
1 teaspoon baking powder

Plum Compote

1/4 pound small purple plums
1 Tablespoon grated lemon rind
1/4 cup sugar
1/2 cup apple juice
1/4 cup cognac
1/4 teaspoon ground cardamom

Directions:
Pistachio Date Gateau

Cream together the first four ingredients. Chop dates and pistachios and fold them into the flour, salt and baking powder, then fold into the first four ingredients. Bake at 330 degrees for 25 minutes.

Plum Compote
Cut the plums in half and remove the pits. Combine the plums and all other ingredients in a medium saucepan. Stir and cover. Cook over low heat until plums are just tender, from 10-20 minutes, depending on the ripeness of the plums. Serve over gateau.
