1 cup refried beans
6 flour tortillas
6 ounces cheddar cheese, grated
Salsa
1/2 head lettuce, shredded
1 tomato, diced

Heat the beans in the microwave or on the stovetop until hot.
Dab each tortilla with beans and cooked veggie mix, sprinkle with cheese, salsa, lettuce and tomato.
Fold like a fast-food burrito and enjoy.
Options:
Use a variety of different vegetables including green peppers, green onions, cooked potatoes, shredded carrots or cabbage.
Use mozzarella or sharp cheddar cheese.
