| Fresh from the oven -- steamy and sweet -- muffins are quick to prepare, nutritious and filling. And they make an easy meal on the run. Morning muffin-making doesn't have to be a daily ritual, but waking up a little early every now and then to make these breakfast treats is a nice way to start the day. Ingredients: 1-1/2 cups flour (or 3/4 cup all-purpose flour and 3/4 cup whole wheat flour)
2 teaspoons baking powder
1/2 teaspoon baking soda
2-1/4 teaspoon ground cinnamon
3/4 cup plus 2 tablespoons milk
1 tablespoon lemon juice
2 tablespoons vegetable oil
1/4 cup firmly packed brown sugar
1 egg
2 teaspoons vanilla

Lightly oil muffin cups, spray with nonstick cooking spray or use baking cups. In a large bowl, combine flour, baking powder, baking soda, and cinnamon. Mix well. Pour milk into a small bowl and add lemon juice. Let stand one minute, then add the oil, sugar, egg and vanilla. Beat with a fork or wire whisk until blended. Add the milk mixture to the dry mixture, mixing only until all ingredients are moistened (there may be lumps). Divide mixture evenly into prepared muffin cups. Bake 15 minutes at 400 degrees, or until a toothpick inserted in the center of a muffin comes out clean. Cool on a rack.
