| Ingredients: 1/2 cup plain nonfat yogurt
1/2 cup skim milk
1 egg
1/2 tsp. vanilla
1 cup whole wheat flour
1 Tbl. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 cup apples, chopped fine

In a separate bowl, combine dry ingredients.
Mix dry ingredients into bowl containing liquid ingredients. Don't overmix.
Fold in apple pieces.
Pour 1/4 cup of batter onto a hot skillet coated with oil. When bubbles begin to burst on first side, flip and cook other side of pancake until golden brown. Serve warm.
Options:
Top pancakes with fruit preserves, syrup, applesauce, or enjoy them plain
