Jumbo S'more Muffins



Ingredients:
1 1/2 cups all purpose flour
1/2 cup graham cracker crumbs
1/4 cup brown sugar, packed
1 teaspoon baking soda
1 egg
1 1/2 cups buttermilk
1/4 cup vegetable oil
3/4 cup chocolate chip morsels
1 1/4 cup mini-marshmallows, divided

Directions:
In a large bowl, combine the dry ingredients. In another bowl, combine egg, oil, and buttermilk. Mix well. Stir wet ingredients into the dry ingredients, just enough to moisten.

Fold in chocolate chips and 1 cup of mini-marshmallows. Grease jumbo muffin cups and fill three-quarters full. Sprinkle remaining marshmallows in the cups. Bake 18 to 20 minutes at 375 degrees F, or until a toothpick inserted in the center of the muffin comes out clean. Cool for 5 minutes, then remove the muffins and cool them on a wire rack. Serve warm.


Makes 6 jumbo muffins.
