1 box frozen chicken or beef taquitos
1 can enchilada sauce
1 1/2 cup sharp chedder cheese
1 medium diced tomatoe
1 small can sliced olives
2 Tablespoons cilantro(more if desired)
1 small container sour cream
How to make this recipe:
Place frozen taquitos in 13x9 baking dish. Pour enchilada sauce over the top. Bake according to directions on taquito package. remove from oven and top with olives and cheese. Cover with foil and let sit about 5 minutes or until cheese melts. Top with tomatoes and dollops of sour cream. Garnish with cilantro. Serve alone or with refried beans and Spanish rice.
Notes: You can adjust the serving size by adding more or less taquitos. If you add more make sure you add more sauce and cheese as well.
