| Used with permission from Gwen Steege's book 101 Perfect Chocolate Chip Cookies: Melt-in-Your-Mouth. Ingredients: 2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
1 egg
1 teaspoon vanilla extract
12 ounces (2 cups) white chocolate chips, or bulk white chocolate cut into 1/4" chunks
1/2 cup macadamia nuts, coarsely chopped
1/2 cup coconut (optional)

2. In a large mixing bowl, combine the flour, baking soda, sugars, and egg until fluffy. Stir in the dry ingredients and blend in the vanilla. Gently stir in the chocolate, nuts, and coconut.
3. Drop by tablespoonfuls onto ungreased baking sheets, spacing cookies a few inches apart. Bake for 8 to 10 minutes, or until cookies are golden brown. Cool slightly, then remove to wire racks to cool completely.
For a special treat, make 6-inch cookies and serve warm with ice cream. You can substitute 1 cup semisweet chocolate chips for 1 cup of the white chocolate chips, and use almonds instead of macadamias. The optional coconut is a special inspiration of Danita's two-year-old son, who tossed in a handful when his mother wasn't looking.
