Super Can/Mex Lasagna



The Ultimate in Mexican-style cooking based on Lasagna style construction. A Canadian/Mexican treat.

Ingredients:
1 sweet green pepper
1 sweet red pepper
1 medium size red onion
3 medium tomatoes
2 bunches of green onions
2 16oz cans red kidney beans
1 16 oz. can black beans
1 12 oz can brown beans
1 20 oz. can of tomatoes
1.5 pound ground beef
1 pound boneless skinless chicken breast
Choice of Mexican style spices or prepared chili mix(preferably fajita mix)
Cheddar cheese, type and quantity as desired
Monterey jack cheese, quantity as desired.
Soft shell tortillas
Fresh garlic
Salt
Pepper

Directions:
Drain excess fluid off of beans and add to large pot, add canned tomatoes, thin slice peppers and red onion add to pot to slowly simmer. Add garlic salt and pepper to taste. Add Mexican spices and fry ground beef and add to pot to simmer. Broil boneless chicken breasts in oven untill firm, then thin slice and simmer in frying pan with Mexican spices and small amount of water until the chicken absorbs the spices. Thin slice tomatoes and green onions and begin layering with the tortilla shells. Add the bean mix in every level,with cheese in every level,and chicken in one level tomatoes in another and green onions on top. Bake in oven at about 350 degrees F for 1/2 hour. Cool enough to serve...then by all means do! Sour cream and crusty bread go great.


Prep time: 30-40 minutes prep and at most 1/2 hour cooking time.

This will make 10 medium portions.
