1/2 cup coconut milk
1/2 cup butter, melted
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 cup raisins (optional)
1/2 cup cashews, chopped (optional)

Pour into a greased 5x9-inch loaf pan. Bake at 350 degrees F for 1 hour and 15 minutes or until tested done. Makes one loaf (16 slices.)
