Easy Chicken Divan



A quick and easy chicken casserole.

Ingredients:
Approximately 2 c. sliced, cooked chicken
10 oz package frozen broccoli
10.5 oz can condensed cream of chicken soup
1/2 c. mayonaise
1/2 t. lemon juice
1/4 t. curry powder
3/4 to 1 c. shredded cheddar (or co-jack, etc.) cheese

Directions:
Preheat oven to 350 degrees F. Spray a 8X8 baking dish w/non-stick cooking spray. Cook broccoli according to package directions. Arrage cooked broccoli in a single layer on bottom of baking dish. Top with chicken. In a small bowl, mix together soup, mayo, lemon juice and curry. Spread over chicken. Sprinkle shredded cheese on top. Bake at 350 degrees F for 30 minutes, or until cheese is nicely melted. Garlic bread or a salad complete this meal nicely.


This is a quick and easy casserole that almost everyone I've made it for has liked. This is a great recipe for using left-over chicken, or you can use boneless, skinless chicken breasts.

Prep time: 15 min (plus 30 min to bake)

Serves 4.
