| This is a lot of work for a sandwich, but worth every bite. It is absolutely delicious. Serve with potato chips and dill pickle.
Ingredients: 2 tbls. vegetable oil
1 large onion, chopped
2 garlic cloves, minced
8 oz. package tempeh, cubed or crumbled
2 tsp. soy sauce
4 slices hearty rye bread, lightly toasted
1 cup Thousand Island dressing (or, half cup ketchup, half cup mayo and chopped green onions)
1 cup sauerkraut, warmed
2 cups shredded Swiss cheese Print me! Add the tempeh and continue to sauté on low heat for about 20 minutes. While the tempeh is cooking, get the remaining ingredients ready. When the tempeh is crisp, add the soy sauce.
Build the sandwiches on the toast by layering the tempeh mixture, Thousand Island dressing, sauerkraut, and Swiss cheese. Broil until the cheese is melted, and serve piping hot. Delicious!
