5 medium potatoes, cut into 1-inch cubes

In a 2-quart, lightly greased baking dish, arrange potatoes in a single layer. In a small non-stick frying pan, cook onions in oil over medium high heat until lightly browned. Add onions and oil to potatoes; mix until well coated. Add salt and pepper to taste.
Bake for 20 minutes or until potatoes are browned and soft. Cover potatoes with cheese. Bake for 5 minutes or until cheese is melted and bubbly.
