1 tablespoon of margarine
1 onion
1-2 cloves of garlic
2-3 Sweet potatoes
2-3 White potatoes
1-2 zucchini
Salt to taste
How to make this recipe:
In a large pot, melt the margarine. Add diced onion, and sauté until onion is slightly transparent.
While onion is cooking, peel and dice the potatoes. (The smaller you cut then, the faster they'll cook.) Add minced garlic. Add peeled and diced sweet potatoes, white potatoes, and add peeled and sliced zucchini.
Fill pot with water until it just covers the veggies. Bring to a boil, cover, and then simmer until veggies are soft and break apart -- about 30 minutes.
Remove from heat, and with a wooden spoon, break apart the potatoes by pressing them against the side of the pot with the spoon. Stir and reheat until steamy hot. Serve.
Variation: Before breaking apart potatoes, but after it's cooked, carefully drain away the water. Then, using a potato masher, mash all the veggies. Serve with margarine -- sweet mashed potatoes!
Serve as a side dish. First course.
