Ingredients: 8 apples, peeled and cored-cut into large pieces (Pacific Rose, Granny Smith, Golden Delicious)
The juice from 1 lemon (1 Tb.)
1 cup fresh cider
3/4 cup sugar
2 teaspoons cinnamon

Peel and core the apples, and as you cut them, place them in the pot. Add the sugar and cinnamon and cook, covered, at a simmer until very tender -- about 20 minutes.
