Blueberry Cinnamon Muffins



These muffins are moist with a crunchy crust of cinnamon sugar -- they never last long!

Ingredients:
2 cups all-purpose flour
2/3 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 1/2 cups fresh blueberries
3/4 cup butter, melted
3/4 cup milk
1 egg
2 tablespoons sugar
1/4 teaspoon ground cinnamon

Directions:
Preheat oven to 400 degrees. Combine flour, sugar, baking powder and salt in a large mixing bowl. Add blueberries and mix carefully.
Melt butter. Line 12 muffin bins with paper cups, or grease them using part of the melted butter. Mix melted butter with milk and egg until well blended.
Add liquids to dry mixture, mix until just blended. Spoon mixture into muffin bins. Mix 2 tablespoons of sugar with the cinnamon and evenly sprinkle over the muffins.
Bake at 400 degrees for 20 to 25 minutes.


Prep time: 20 minutes

Makes 12.
