1 1/2 cups leeks, Chopped.
1/4 cup onion, chopped small
1 clove garlic, minced
1/2 cup half and half
4 tablespoons butter
4 cups chicken stock
3 tablespoons minced carrot
2 1/2 cups uncooked potatoes, uncooked.
Salt, Pepper, SBeau Monde seasoning to taste
How to make this recipe:
Saute leeks, onion, garlic, carrots in butter until soft but not browned. Add stock and potatoes. Cover and simmer till potatoes are soft. (40 mins or so)
Let cool slightly and then puree in blender in batches. Add half & half and pour mixture back into pot. Reheat and add seasonings to taste. Prep time: 1 hour
