Moi-Moi



It's like Sponge Cake , but made out of beans .

Ingredients:
Black eyed beans
2 cups(any vegetable oil
2 cooking spoons
2/4 cup of dried shrimps or prawns blended)
3 hard boiled eggs(cut into cubes) deboned oily fish preferably mackerel
2 TBS tomato puree
Salt and pepper to taste

Directions:
Soak the beans overnight for easy removal of the skin, then blend to a smooth paste. Pour into a mixing bowl add all the ingredents together, then get baking foil that comes in a muffin shaped form or the metal ones in silver color, grease them with vegetable oil, and start spooning the mixture in each, half in each cup, because this rises as it cooks.
Add water to a steaming pot and put the cup of the Moi moi in as you like, cover the steamer and allow to cook for at least two hours, and then the moi moi should be done. Allow to cool down. It's best served hot. To warm you just add water to the steamer and allow to boil for a while, you can add a tomato sauce to this and also or serve it with rice. Serve warm


Prep time: 2 hours.

Can serve up to 12 to 15 ,halfed.
